  • ½ cup urad dal (black gram lentils)
  • Salt to taste
  • Water as needed

  1. Preparation of Batter:
    • Rinse ragi and urad dal separately under running water.
    • Soak them in water for about 4-6 hours.
    • After soaking, grind them separately to a smooth paste using a little water.
    • Combine all the ground pastes in a large bowl. Mix well.
    • Add water gradually to achieve a thick, pourable batter consistency. Mix thoroughly to ensure there are no lumps.Add salt mix well.
    • Allow the batter to ferment overnight or for at least 8 hours. The fermentation process enhances the flavor and texture of the idlis.

  2. Steaming the Ragi Idlis:
    • Grease the idli molds with oil or ghee to prevent sticking.
    • Pour the batter into the molds, filling each cavity about three-fourths full.
    • Heat water in a steamer. Once the water comes to a boil, place the filled idli molds in the steamer.
    • Steam the idlis for 12 -15 minutes on medium heat.
    • Once done, remove the idli molds from the steamer and allow them to cool for a few minutes.
    • Carefully unmold the idlis using a spoon .
    • Serve the Ragi Idlis hot with coconut chutney, sambar, or any chutney of your choice.
