Mango Souffle

Mango Souffle recipe without eggs and gelatin is a celebration of summer. A no bake mousse-like mango dessert on a biscuit base topped with mango jelly.
A Souffle is a classic french Dessert that is rich creamy and light. While traditional recipes are egg-based but here I am sharing the same light version without eggs.
Veg gelatinpowder helps to replace the eggs . This eggless Mango Soufflewith divine flavour of mango and the light texture of Souffle gives your taste buds a treat.
My family loves mangoes so this time I planned to prepare this dessert This amazing dessert is enjoyed by all adults and kids.

Cooking Time: 30 Min
Setting Time : 3 – 4 hrs
Serves: 4
Ingredients
For Dessert:
- Milk 750 ml
- Mango Pulp Puree 300 ml
- Milkmaid 200 ml
- Cottage Cheese 125 gm
- China Grass/Agar 7 gm
- Water 100 ml
- Chocolate Biscuits 100 gm
- Milk 50 gm
For Mango Jelly:
- Mango Pulp Puree 50 ml
- Water 150 ml
- China Grass / Agar 2 gm
- Sugar 2 Tbsp
- Lemon Juice 2 Tbsp
Method
- Use a 9-inch springform pan/mould/dessert bowls
- Crush Biscuits add milk mix . Press the biscuit mixture in the pan base firmly. Put in the freezer to set.
- Boil milk till it reduces to half. Cool.
- Soak china grass in 100 ml hot water boil and keep stirring until it dissolves.
- Blend milk, cottage cheese, mango pulp, milkmaid and china grass mixture till smooth.
- Pour this mixture onto the biscuit base refrigerate till set.
For Mango Jelly:
- Soak china grass in hot water boil and keep stirring till it dissolves.
- Add mango pulp and sugar let it come to boil. Add lemon juice mix take a boil . Cool .
- Pour over milk base.
- Refrigerate till chill and jelly sets.
P.S: For cottage cheese take 500ml milk boil, add 1 tbsp lemon juice boil till the milk curdles, strain in a muslin cloth. Keep it hanging for 2 hours. Cottage Cheese is ready.
