Methi Laddu
Preparation Time: 90 min
Cooking Time: 15 min
Total Time: 1 hr 45 min
Serve: Around 50 laddus (number may vary according to the size)
Ingredients
- Ghee: 400 gm
- Gond (edible gum): 100 gm
- Dry dates (khareek desseed and chopped): 50 gm
- Dried coconut (khopra, grated or sliced): 50 gm
- Almonds 50 gm
- Lotus seeds (makhana): 50 gm
- Pumpkin seeds: 50 gm
- Melon seeds: 50 gm
- Sunflower seeds: 50 gm
- Flax seeds: 50 gm
- Urad dal (split black gram wash and dry for 30 minutes ): 50 gm
- Walnuts: 50 gm
- Godambi (Bhilawa seeds) : 50 gm
- Sesame Seeds ( til ) : 50 gm
- Ragi flour (finger millet): 50 gm
- Singoda flour (water chestnut flour): 50 gm
- Kesar (saffron): around 10 strands
- Warm milk: 1 tsp to soak the kesar
- Jaggery: 450 (grated or chopped)
Method
- Fry the Gond
- Heat ghee in a pan over medium flame.
- Add gond and fry in small batches until it puffs up completely.
- Drain the fried gond and set aside.
- Remove excess ghee from the pan, leaving only ⅛ teaspoon for the next step.
2. Roast Each Ingredients
- In the same pan, roast the following ingredients one by one, adding ⅛ teaspoon of ghee for each on a low flame
- Dry dates: Roast for 1-2 minutes until aromatic.
- Dried coconut: Roast until fragrant.
- Almonds: Roast for 1-2 min
- Lotus seeds (makhana): Roast for 4–5 minutes until crisp.
- Pumpkin seeds: Roast for 1 minutes until they start popping.
- Melon seeds: Roast for 1 minutes.
- Sunflower seeds: Roast for 1 minutes.
- Flax seeds: Roast for 1 minutes .
- Urad dal: Wash urad dal ,dry for around 30 minutes , roast for 2-3 minutes until aromatic.
- Walnuts: Roast for 1–2 minutes.
- Sesame seeds : Roast for 1 -2 min
- Godambi : Roast for 2 minutes till aromatic
3. Roast Flours
- Then in the same pan roast singoda flour and ragi flour separately until their raw aroma disappears (about 3 -4 minutes each).
4. Grind the Ingredients
- Coarsely grind all the roasted ingredients (gond, nuts, seeds, dates, copra etc) one by one. Ensure the mixture remains slightly coarse for a crunchy texture.
5. Prepare the Saffron
- Lightly roast saffron in the pan for a few seconds.
- Crush and soak it in 1 teaspoon of warm milk. Set aside.
6. Melt the Jaggery
- In a large pan, melt the remaining ghee over low heat.
- Add the grated jaggery and allow it to melt completely.
- Let the mixture boil until it becomes slightly frothy.
- Add the soaked kesar and mix well.
7. Combine Everything
- Gradually add all the ground ingredients to the jaggery syrup.
- Mix thoroughly until all the ingredients are well incorporated. Turn off the heat.
8. Shape the Laddus
- While the mixture is warm, take small portions and shape them into round balls using your palms.
- Place the laddus on a large plate and let them cool completely.
9. Store
- Once cooled, store the laddus in an airtight container. They can be kept at room temperature for more than a month .
