Chicken Khow Suey – Noodles in Coconut Curry is a Burmese delicacy with an authentic burst of flavours. Burmese Khow Suey is a delicious noodle dish made with noodles, curried chicken and coconut milk. Chicken Khow Suey which is noodles in coconut curry is served with a variety of condiments. There are many variations of the Khow Suey recipes and people across the world have prepared it to suit their local preferences and ingredients that are easily available.

Chicken Khow Suey- Recipe
Ingredients
2 packets Noodles (140 gm each)
500 ml Coconut Milk
½ kg boneless Chicken
½ cup oil
Condiments
2 Onions
1 pod Garlic
¼ cup Peanuts
2 Eggs boiled
½ cup fried Noodles
Lemon wedges
Chilli Oil- 1 tbsp Chilli flakes + 1/2 tbsp Chilli powder +1/ 8 cup hot oil
4 -5 spring onions
Curry Paste
2 Onion
1-inch piece of Ginger
15 Garlic cloves
1 tsp Jeera powder
1 tsp Coriander powder
½ tbsp Red Chilli powder
3 tbsp Besan( gram flour)
¼ cup Oil
Method
Boil the noodles and keep them aside
Condiments Preparation
Slice garlic, heat oil in a broad pan add slice garlic fry just till the edges start to turn brown take it out on a paper.
Thinly slice the onions, and in the same oil fry the onions till they just start to brown take them out on a piece of paper.
Take a hand full of noodles and fry them till golden on both sides, and break them gently into small pieces.
Roast the peanuts and crush them partially.
In a bowl mix chilli powder and chilli flakes, heat oil when hot pour over the chilli mix, and stir it.
Boil and slice the eggs.
Chop the greens of the spring onions
Coconut Curry
Roughly chop onion and ginger. In a blender add all ingredients of the curry paste except oil and blend to a fine paste.
Heat oil in a deep pan and add in the ground paste and fry till the paste leaves the oil keep stirring continuously.
Add in chicken sauté on high heat for 3 – 4 minutes.
Lower the heat add 1 cup water add salt to taste.
Cover and cook for 10 minutes add in coconut milk and let it come to a boil. Cook for 2 to 3 minutes off the flame.
To serve
In a deep bowl add a handful of noodles. Pour a spoon full of coconut curry with chicken pieces over it. Garnish with the condiments and serve.
