Chicken Clear Soup

A mildly flavoured chicken clear soup that can be adjusted to your liking and flavoured by adding different ingredients.
In this recipe chicken clear soup, to the chicken pieces, I have added a few veggies ( whatever is available in my kitchen ) onion potato and carrot. You can add also add cabbage beans etc.
Bubbling assorted veggies with chicken pieces gives a different taste to your taste bud.
Chicken soup can be made in various ways. Here I have shared a simple recipe for chicken soup.
When any member of my family has a cold, I make this, it helps them to heal naturally in a few days.
Recipe to make chicken clear soup

Total Time: 40 min
Serves: 3
Ingredients
- 250 gm Chicken Pieces
- 1 Potato
- 1 Onion
- 1 Carrot
- 1 Tbsp Ginger Chopped
- 1 Tbsp Garlic Chopped
- 1 tsp ghee /butter/oil
- 1 tsp Cornflour (optional)
- 1 Tbsp Lemon Juice (optional)
- Salt to taste
- Few Coriander Leaves for garnishing
Method
- Add chicken and veggies 3 cup water to a cooker .
- Pressure cook for 3 whistles, and then let it cook on slow flame for 10 min.
- Heat a deep pan with ghee, sauté ginger garlic for a minute.
- Strain the chicken stalk to the pan and boil for 5 minutes.
- Add salt and shredded chicken (boiled chicken ) and pepper powder.
- If you want to add lemon juice, off the flame and add lemon juice.
- I like my soup thin, I and my family do not like thick soup therefore I do not prefer to add cornflour.
- But if you do not prefer thin soup and are a thick soup lover make a cornflour slurry of 1 tsp cornflour in ¼ cup water, mix well no lumps should be there.
- Add the cornflour slurry to the boiling soup, boil for 1 to 2 minutes.
- Garnish with coriander leaves.
- Serve the hot soup.
- If you like coriander flavour in the soup add 2 tbsp finely chopped coriander leaves after sautéing ginger garlic, add coriander leaves sauté for a few seconds add the soup
