Beetroot Rice Served with Coconut Curry and Grilled Chicken

Beetroot Rice Served with Coconut Curry and Grilled Chicken is a balanced meal with protein, carbohydrates, fibre, minerals and vitamins. A simple rice preparation with flavours of Beetroot , and Coconut Curry served with grilled chicken. In this dish rice is boiled and tempered with beetroot , coconut curry is prepared with simple flavouring and served with grilled chicken.
If you like a sweet-savoury taste, chicken can be made Honey Pepper Flavour also. Honey Pepper Chicken

Ingredients
Beetroot Rice
- 200 gm Rice
- 1 Medium size Beetroot boiled and diced
- 6 cloves of Garlic finely chopped
- 2 Green Chillies finely chopped
- 1 medium-size onion chopped
- Few curry leaves
- 3 – 4 tbsp coriander leaves
- ¼ cup curd
- 1 Tsp Mustard Seeds
- 1 tbsp Oil
- A handful of Coriander leaves chopped
- Salt to taste
Coconut Curry
- 250 ml Coconut Milk
- 8 – 10 Garlic finely chopped
- 1 tsp Ginger chopped finely
- 2 Green Chillies
- 1 small Onion Chopped
- 2 Tbsp Tomato Chopped
- 1 Tsp Mustard Seeds
- Few Curry Leaves
- 1/8 Tsp Turmeric powder
- 2 Tablespoon Oil
- Salt To Taste
Grilled Chicken
- 4 pieces of Chicken drumsticks
- ½ Tsp of Chilli Powder
- ¼ Tsp Turmeric Powder
- 1Tsp Coriander Powder
- 1 Tsp Oil
- Salt to taste
Method
For the Chicken
- Mix all ingredients in a plate.
- Rub this mixture on the drumsticks .
- Keep aside for 30 minutes.
- Cook the drumstick in a covered pan ,add little water if the marinade dries up.
- Cook till soft.
For The Rice
- Wash Boil and cook the rice.
- Heat oil in a pan, add mustard seeds as they splatter add garlic onion green chilies, and curry leaves.
- Saute for 2 – 3 min till onions are transparent.
- Add in chopped beetroot cook for 2 minutes.
- Add in rice season with salt.
- Toss the rice, add curd and mix the rice.
- Lastly, add coriander leaves and lemon juice.
For the Coconut Curry
- Heat oil in a pan, add mustard seeds, and as soon as they start to splutter add garlic ginger green chillies.
- Saute for a minute.
- Add curry leaves and chopped onions, sauté for 2 minutes.
- Add tomatoes and turmeric powder.
- Cook the mixture for a minute.
- Add coconut milk and salt.
- Let it boil for 2 -3 minutes.
- Taste and adjust the seasoning.
To Serve
- On a serving plate put the rice in the center.
- Pour the coconut curry around it.
- Place the chicken drumstick on the rice.
- Garnish with coriander leaves.
