Awesome Mutton Mastani Pulao

Mutton Mastani Pulao is a delicious aromatic rice and mutton dish with strong flavours of round red chilli (Bor Mircha) and garlic. Mutton Mastani Pulao Recipe is made using Mutton rice tomato puree potatoes boiled eggs and cashew nuts.
How is Mutton Mastani Pulao Made ?
Cut and fry potatoes. Boil egg and slice. Finely chop garlic. Fry onions till golden and grind them. Soak rice and cook till soft. Strain the rice and keep it aside. Keep tomato puree ready.
Clean and wash the mutton keep in a pressure cooker, add tomato puree, onion paste, red round chilli (bor mirchi) , ginger garlic paste, red chilli powder, coriander powder and cashew nut powder. Pressure cook till mutton is soft. Cook for 3 whistles on high flame then cook for 10 to 15 minutes on low flame. Check the mutton if not soft keep it again for 5 to 10 minutes.
In a pan heat, oil add cumin seeds and chopped garlic sauté for a few seconds add cashew nut and round chillies sauté till cashew nut are brown.
Spread this mixture on rice.
In a deep pan add oil spread half rice, mutton gravy, potatoes, boiled egg slice coriander leaves top with rice. Add ghee cover and cook till steam comes out and rice is fully cooked.

Serves: 5
Ingredients:
- Mutton 500gm
- Long Grain Rice 300gm
- Tomato 500gm
- Onion 250gm thinly sliced
- Potato 3 medium size sliced lengthwise
- Egg 2 Boiled and sliced lengthwise
- Coriander leaves chopped 1cup
- Ginger Garlic paste 2 Tablespoon
- Red Chilli powder 2 Tablespoon
- Coriander Powder 3 Tablespoon
- Cashew nut powdered 2 Tbsp
- Round Red Chilli 15 (Bor Mircha)
- Garlic finely chopped ¼ cup
- Cumin Seeds 1 Tablespoon
- Cashewnut 30gm slit into half
- Oil 6 Tablespoon + required to fry potatoes
- Salt to taste
- Ghee 2 Tbsp
Instructions:
- Firstly ,wash and soak rice for 30 min, cook in salted water till ninety percet cooked, strain, and spread on a big plate.
- Blanch tomatoes in hot water, remove the skin, puree it.
- Fry potatoes.
- Now in the same oil add onions saute till golden brown. Grind it.
- Clean and wash mutton add salt, ginger garlic paste, red chili powder, coriander powder, cashew nut powder, 7 round red chilies, tomato puree, and ground onion, mix all. Then, pressure cook on high flame for 3 whistles ,then cook on slow flame for 10 to 15 minutes till mutton is tender.
- Next , in another pan heat, 4 tbsp oil add cumin seeds and chopped garlic sauté for few seconds add cashew nut, and remaining round red chilies sauté till cashew are light golden. Pour and spread on rice. Mix very lightly.
- Finally ,take a heavy bottom pan add 2 Tbsp of oil arrange half quantity of rice, spread mutton with gravy, fried potatoes, boiled sliced eggs, chopped coriander leaves, and last place a layer of remaining rice on it. Add 2 tbsp of ghee on top.
- Lastly, cover with lid and cook on a slow flame till rice is cooked. Serve hot.
