American Chopsuey

American Chopsuey is one of the most popular Chinese fusion recipes.This is a crispy crunchy recipe, here I have made with fried noodles, it can be made with boiled noodles also. In American Chopsuey fried crispy noodles, crunchy vegetables is mixed with a sweet tangy sauce.

Ingredients
Noodles
- 150 gm Instant Noodles or Whole Wheat Noodles or Hakka Noodles
- 4 cups of water
- Salt as per taste
- 2 ½ tablespoon Cornflour
- Oil for frying
Sauce - ½ cup shredded cabbage (100 gm)
- ½ cup shredded carrot (100 gm )
- ⅓ cup thinly sliced capsicum (100gm)
- ¼ cup chopped spring onions (70 gm)
- ½ cup sprouted beans
- Boneless Chicken ½ cup cut into strips (optional)
- ½ teaspoon finely chopped ginger
- ½ teaspoon finely chopped garlic
- ½ cup tomato ketchup
- ½ tablespoon soya sauce
- ½ tablespoon sweet red chili sauce
- 1 ½ tablespoon oil
- ½ to 1 tsp sugar
- ¼ teaspoon black pepper powder
- salt
- 2 tbsp chopped spring onions green
- 2 tbsp chopped coriander for garnishing
- 2 tablespoon cornflour
- 1 egg for garnishing
Method

CHOPSUEY SAUCE PREPARATION - If you are adding chicken wash and cut chicken in fine strips add 1 tsp of salt mix and keep aside. (This step is optional )
- Shred the veggies in a food processor or finely chop the vegetables with the knife.
- In a big bowl take 1 and ½ cup water add ½ cup tomato ketchup, ½ tablespoon soya sauce, and ½ tablespoon sweet red chilli sauce mix very well in a bowl.
- Mix 2 tablespoon cornflour with 2 tablespoon water very well in another bowl.
- Add to the sauce mixture stir very well.
MAKING CHOPSUEY SAUCE - Heat 1 tablespoon oil in a wok or kadhai on low flame.
- Add ½ tea spoon finely chopped ginger and garlic.
- Saute for few seconds till the raw smell of ginger and garlic goes away.
- Add chicken strip fry for 4 – 5 minutes on high heat. Keep stirring.
- Add ¼ cup spring onions and fry on high heat for a minute.
- Add shredded vegetables and stir fry vegetables on high flame for 2 – 3 minutes.
- Add sprouts fry for few seconds, reduce the flame.
- Stir the sauce mixture very well with a whisk as the cornflour will have settled down.
- Add the sauce mix to the stir-fried chicken and vegetables.
- Mix very well with stir-fried veggies.
- Add ¼ teaspoon black pepper powder. Mix very well.
- Simmer on low flame for 2 minutes till the sauce thickens.
- Now add 1 teaspoon vinegar and sugar, mix very well.
- Switch off the flame add 2 tablespoons spring onion green.
- Mix well.
- Taste and adjust seasoning of salt sugar black pepper powder or any sauces if required.
SERVING - Break the fried noodles.
- Top the crispy noodles with the sauce.
- Add half fried egg or omelet on top and serve immediately.
- U can omit the egg and add green onions or coriander.
