Several Stuffing Ideas you can make for the fritters
1. Cheese and Herbs
- A combination of mozzarella, cheddar, or cream cheese mixed with fresh herbs like parsley, basil, or thyme.
- Add garlic and a pinch of chili flakes for extra flavor.
2. Vegetable Medley
- Sautéed vegetables such as spinach, mushrooms, carrots, bell peppers, or zucchini.
- For added texture, include crumbled paneer or tofu.
3. Spiced Potatoes
- Mashed potatoes seasoned with spices like cumin, coriander, turmeric, and garam masala.

Ingredients For Crispy Healthy Stuffed Millet Fritters
- Barnyard Millet flour 1 cup
- Coriander leaves chopped ¾ cup
- Curd ½ cup
- Coriander pd 1 tbsp
- Jaggery powder 2 tsp
- Turmeric pd 1 tsp
- Green chillies 2 to3 Crushed
- Salt to taste
- Baking Soda ⅛ tsp
For The Stuffing
- ¼ cup grated coconut
- ¼ cup grated cheese
- 2 green chilies finely chopped
- ¼ teaspoon mustard seeds
- Few curry leaves
- 1 tbsp finally chopped coriander leaves
How to make Crispy Healthy Stuffed Millet Fritters
For the stuffing
- I’ve used equal parts coconut and cheese in this recipe, but if you prefer a cheesier flavor, feel free to increase the amount of cheese.
- In a bowl, mix grated cheese, coconut, and chopped coriander leaves.
- In a pan, heat some oil and add mustard seeds and curry leaves.
- Sauté for 2–3 seconds, then add chopped green chilies and saute , turn off the flame.
- Add the tempered oil to the bowl of grated coconut and cheese ,mix lightly and set it aside.
For the Fritters
- In a mixing bowl, combine freshly chopped coriander leaves, curd, coriander powder, jaggery powder, finely chopped green chilies, a pinch of baking soda, and salt. Cover the mixture and set it aside for 10 minutes.
- The amount of flour required may vary slightly depending on the type of millet flour used. Therefore, add the flour gradually in 2 to 3 parts.
- Afterward, add millet flour and mix to form a stiff dough.
- Divide the dough into small balls, about 3 cm in diameter.
- Flatten the balls , place a small amount of stuffing in the center of each flattened ball .
- Then wrap the dough around the stuffing, ensuring it’s fully enclosed.
- Roll the stuffed dough gently to shape it into a smooth, round ball.
- Flatten the fritters slightly, and deep fry them in hot oil over low heat, turning occasionally until they are golden brown on both sides.
- Serve these delicious fritters with your favorite dip.
