Schezwan Sauce

Schezwan sauce is a spicy pungent sauce made with dry red Kashmiri chillies and garlic. Schezwan sauce is a fusion of Indo Chinese recipe, it is spicy with a strong garlic flavour. This homemade sauce is a simple way to spice things up!
Schewzan sauce tastes great with rice noodles and chicken and can also be served as a condiment with any starters like pakoras sandwiches dumplings roasted veggies mutton chicken seafood and snack. Or just spread it over toasted bread. It can also be used as a marinade for grilled dishes like kababs chicken etc.

Ingredients
- 10 Whole Kashmiri Red Chilli
- ¼ Cup Vinegar
- 40 gm or 2 pods of Garlic finely chopped
- 1-inch piece ginger finely chopped
- 1 Tbsp Tomato Sauce
- 1 Tsp Soya Sauce
- 2 Tbsp Oil
- Salt to taste
Method - Soak Kashmiri chilly in vinegar for 6 – 7 hours.
- Grind with vinegar to a fine paste.
- Heat oil in a pan, add finely chopped ginger garlic, saute till the raw smells of ginger-garlic goes.
- Add chili paste and both the sauces.
- Cook it until it begins to boil.
- Cook for 5 min off the flame.
- Cool and store in a glass jar in the freezer.
