Cheesy Chicken Veggies Rice Bake is easy to make and tasty and cheesy.
Cheesy Chicken Rice is a perfect one-dish meal in which you can have a variation to add chicken and veggies of your choice.
This one-dish wonder features moist, tender shredded chicken covered with melted cheddar cheese, sitting on a bed of creamy rice and vegetables.
How to make cheesy chicken veggies rice ?
In this recipe, boil rice, chicken is marinated in salt ginger garlic green chilli paste. You can take any vegetables of your choice carrot, french beans, capsicum, mushroom, broccoli etc. Here I have used carrot, beans, capsicum.
In a deep iron wok heat oil add finely chopped garlic and green chillies, saute for a few minutes then add chicken and cook for 8 to 10 minutes till chicken is soft, now add vegetables and saute for 3 to 4 minutes, add salt and pepper while sauteing.
In a baking dish spread boiled rice, grated cheese, chicken vegetable mix, white sauce, top with grated cheese and bake.

Ingredients:
- Boiled Rice 100gm
- Chicken Boneless 100 gm
- Mixed vegetables 100 gm diced finely (carrot broccoli beans capsicum)
- Ginger Garlic Paste 1 Teaspoon
- Green Chilli Paste ½ Tsp
- Green Chillies 3 finely chopped
- Garlic 8 -10 cloves finely chopped
- Pepper Powder ½ Tsp
- White Sauce 1 Cup (200 Ml)
- Grated Cheese 1to 2 Cup
- Oil 1 Tablespoon
- Salt as per taste
- Coriander Leaves 3 Tbsp finely chopped
Instructions:
- Wash Chicken ,cut into thin strips.
- Marinate chicken strips in salt ginger garlic paste and green chilli paste .
- Keep aside for 20 to 30 minutes.
- Heat oil in a pan add chopped garlic and green chillies saute for a minute.
- Now add chicken pieces saute for 8 to 10 min till chicken pieces change colour and are soft.
- Add chopped vegetables saute for 4-5 min.
- Add salt pepper powderand mix.
- In a baking dish spread rice top it with coriander leaves , half grated cheese, chicken, and veggies.
- If you want it more cheesy you can spread more cheese .
- Spread white sauce over it.
- Top it with other half grated cheese.
- Bake it at 180 degrees for 15-20 min till cheese melts.
- Serve hot.
