How To Make A Caramel Custard

A yummy caramel covered custard that’s super easy to make will be relished by the whole family and will satisfy your sweet craving.
This caramel custard can be served warm or chilled. My husband children and I have always enjoyed this simple caramel custard recipe. I have made it so often, it will also become your favourite too.
Caramel Custard Is Made of ?
Traditionally Caramel custard is made of milk sugar and eggs. My mother made the best caramel custard, I learnt from her she use to boil the milk by adding parle-g biscuits dates milk masala powder and sugar till thick consistency was formed( till the milk was reduced to nearly half) which gave a very rich and tasty flavour to the milk.

How to make caramel custard?
In a deep pan boil milk add parle-g dates (remove seeds) sugar and milk masala powder. Boil till thick , it is reduce to little less than half .Keep stirring at regular interval to prevent milk from sticking to the bottom.
Beat egg in the blender jar of a mixer, add thick custard blend well. Add in the caramel custard mould.
Steam in a pressure cooker for 30 minutes without the whistle.

Cooking Time: 1hr 10 min
Total Time: 1 hr 20 min
Serves: 4 to 5
Ingredients
- 1 Liter Milk
- 2 Eggs
- 4 Parle-G Biscuits
- 4 Dates (remove seeds)
- 5 Tbsp Sugar For Custard
- ¼ Cup Sugar For Caramel
- 1 Tsp Milk Masala Powder
Method
- In a pan add ¼ cup sugar, add a few drops of water and heat on a low flame till the sugar caramelizes. Keeping the flame low is important or else the sugar will burn.
- Then pour the caramel into a mould and allow it to cool.
- In a thick deep pan boil milk with parle-g biscuits , dates , milk masala powder and sugar, keep stirring in between to avoid sticking at the bottom.
- If you don’t have milk masala powder you can powder a few almonds cashew pistachio with cardamom powder or a few strands of saffron and add.
- Boil the milk till thick, till it reduces to nearly half.
- In a blender jar of a mixer beat eggs , add the thickened milk and blend well .You can use a hand blender also.
- Now pour this egg milk mixture over the caramel , cover with aluminium foil.
- In a cooker add two cups water , put a ring at the bottom and on the top put the mould. Close the lid and let it steam for 30 minutes on medium flame . Do not put the whistle.
- Unmould from the mould and serve with caramel side up.
- Serve hot or cold.
