Special Awesome Zafrani Mutton Korma

Zafrani Mutton Korma is one of the best exotic mutton dishes. A traditional mutton dish Zafrani mutton korma is cooked with aromatic spices which are rich and full of flavours. It is a delicious unique royal dish made on special occasions.

Serves: 3 – 4
Ingredients
- 500 gm mutton
- 1 and ½ tsp ginger garlic paste
- 4 green chilies crushed
- 2 tsp red chili powder
- 2 tsp coriander powder
- 1/8 tsp turmeric powder
- 4 tbsp curd
- ¾ cup fried onions (birista)
- ½ tsp garam masala powder ( click on the link for homemade garam masala powder recipe)
- 7 cashewnuts grind with little water
- Few strands of saffron (kesar)
- 1 black cardamom (badi elaichi)
- 2-inch piece cinnamon (dalchini)
- 4 clove (laung)
- 2 tbsp ghee
- 2 tbsp oil
- I tsp ginger javelins
To be ground to a fine powder - 5 green cardamoms (choti elaichi)
- 2 black cardamoms seeds only (badi elaichi dane)
- 1/8 nutmeg (jaiphal)
- Few strands of mace (javitri)
Method
- Heat ghee and oil together in a pan add 1 black cardamom 2-inch piece cinnamon and 4 cloves and sauté for few seconds.
- Add mutton ginger garlic paste and crushed green chillies.
- Saute for 5 to 6 minutes on high flame, keep stirring in between to prevent it from sticking in the bottom.
- Add red chilli powder coriander powder turmeric powder and 2 tbsp beaten curd.
- Cook on low flame for 8 to 10 min keep stirring in between.
- Add half cup water pressure cook the mutton for 10 to 15 minutes till the mutton is soft.
- The time to cook the mutton depends on its quality, at times it may vary. It may take more or less than 15 minutes.
- Grind green cardamoms seeds of black cardamom nutmeg and mace to a fine powder.
- Soak a pinch of saffron in 1 tbsp of warm water.
- Crush the fried onions with your hands do not grind.
- In a bowl add crushed onions, garam masala powder, ground powder cashew nut paste and 2 tbsp curd.
- Mix properly and add to the mutton. Add half a cup of water let it come to a boil.
- Cover and cook on low flame for 8 to 10 minutes.
- Add ginger javelins and saffron water, cook for 1 minute.
- After adding saffron cook for just a minute to retain its flavour.
- Serve hot with garlic kulcha.
