How to make Biryani Masala powder

Biryani Masala powder is a perfect blend of spices for the perfect biryani!! Aromatic , flavorful and easy to make at home.This homemade biryani masala powder can be used to prepare any kind of biryani and pulao or even in a chicken or mutton curry. Making Biryani Masala powder at home is very easy. The aroma of fresh homemade spice powder is always superior to the store bought ones.
It can be made in bulk and stored in small packs in air tight containers in freezer. Use them one after another as needed.

Total Time : 15 minutes
Serves : 70 gm (approx )
Ingredients
- 4 Bay Leaves (tej patta) 4
- 6 Dry Hot Red Chillies ( Tikkhi lal mirch)
- 2 ½ Tbsp Coriander Seeds (akha dhana)
- 1 Tbsp Black Cumin Seeds ( shahjeera)
- 1 Tbsp Cumin Seeds ( jeera)
- 1 Tbsp Fennel Seeds (saunf)
- 1 ½ Mace (javitri phool)
- 12 Black Peppercorns (kala meere)
- 1 Nutmeg (jaiphal)
- 3 Black Cardamom (badi elaichi)
- 12 Green Cardamom ( hari elaichi)
- 10 Cloves (laung)
- 2 Star anise (chakri phool)
- 3 inch piece cinnamon (dalchini)
- 1 Tbsp Dry pomegranate seeds( Anardana)
The above WHOLE spices to be roasted and ground
- 1 Tbsp Kashmiri Chilli Powder (lal mirchi powder)
- ½ Tbsp Turmeric Powder (haldi)
- 1 Tbsp Garlic Powder (lasan powder)(optional)
- ½ Tbsp Dry Ginger Powder (soonth)
Method
- Heat a broad pan.
- Roast all the WHOLE spices (not the powder) on a low flame for 4 to 5 minutes till the aroma of spices comes it should not change the color, keep stirring continuously.
- Cool and grind to a fine powder in a mixer.
- Add chili powder, turmeric powder, garlic powder, and dry ginger powder mix properly.
- Cool and store in an air-tight container.
- Stays for 6 months.
- To 1 kg of chicken or mutton add 2 tbsp of biryani masala.
