Tom Kha Gai is a most popular Thai soup. Tom means to boil , Kha means galangal and gai means chicken. Coconut milk is another key ingredient in Tom Kha Gai soup which gives a creamy texture and a milder sweeter taste.
Tom Kha Gai / Thai Coconut Soup recipe is infused with lemon grass galangal (which can be substituted with ginger) kaffir lime leaves . You will also find a mixture of chicken and mushroom .
It’s an easy recipe perfect for a dinner at home.

Here’s a quick and easy recipe for Tom Kha Gai / Thai Coconut Soup

Ingredients

  • 2 cup chicken stock
  • 2 piece of lemon grass
  • 2 inch piece of galangal ( u can substitute with ginger),
  • 2 medium shallots diced ( onion)
  • 1 tomato
  • 1 tbsp fish sauce
  • 1 tsp sugar
  • 400 ml as coconut milk
  • 150 gm mushroom
  • 2 – 3 lime leaves,
  • 2 thai chilli
  • 200 chicken sliced into small pieces
  • 2 green onions chopped
  • Handful of coriander leaves
  • Juice of 1 to 2 lime ( u can add more or less according to your taste)


Method

  • Cut lemon grass into 2 to 3 parts.
  • Peel the galangal.
  • Dice the shallots.
  • Remove stem from lime leaves.
  • Chop tomatoes in slices.
  • Chop the mushroom.
  • Slice the chicken breast.
  • Crush the lemon grass in mortar and pestle , then the galangal and thai chilli.This way the natural oil and flavour will be released.
  • Pour 2 cups of chicken stock in a deep pan .
  • Add lemon grass , galangal and shallots .Turn on to medium heat.
  • Let it simmer to get its fragrance infused into the soup .
  • Then add sugar , fish sauce , coconut milk , chicken , mushrooms , tomatoes , lime leaves and thai chilli.
  • Gently stir and mix everything together and cook it slowly over low heat.
  • Cook till the chicken and tomato is soft and mushroom are cooked and soup is done.
  • Then add chopped green onions and chopped coriander leaves.
  • Add lime juice depending on your taste .
  • Turn off the heat.
  • Serve with any flavoured rice or only as a soup .
