Schezwan Sauce

Schezwan sauce is a spicy pungent sauce made with dry red Kashmiri chillies and garlic. Schezwan sauce is a fusion of Indo Chinese recipe, it is spicy with a strong garlic flavour. This homemade sauce is a simple way to spice things up!

Schewzan sauce tastes great with rice noodles and chicken and can also be served as a condiment with any starters like pakoras sandwiches dumplings roasted veggies mutton chicken seafood and snack. Or just spread it over toasted bread. It can also be used as a marinade for grilled dishes like kababs chicken etc.

Ingredients

  • 10 Whole Kashmiri Red Chilli
  • ¼  Cup Vinegar
  • 40 gm or 2 pods of Garlic finely chopped
  • 1-inch piece ginger finely chopped
  • 1 Tbsp Tomato Sauce
  • 1 Tsp Soya Sauce
  • 2 Tbsp Oil
  • Salt to taste

    Method
  • Soak Kashmiri chilly in vinegar for 6 – 7 hours.
  • Grind with vinegar to a fine paste.
  • Heat oil in a pan, add finely chopped ginger garlic, saute till the raw smells of ginger-garlic goes.
  • Add chili paste and both the sauces.
  • Cook it until it begins to boil.
  • Cook for 5 min off the flame.
  • Cool and store in a glass jar in the freezer.
