Ingredients

  • 2 medium-sized raw mangoes
  • 1/2 cup sugar (adjust to taste)
  • 1 teaspoon roasted cumin powder
  • 1/2 teaspoon black salt
  • 1/4 teaspoon salt (adjust to taste)
  • 1/2 teaspoon black pepper powder
  • 2 cups water
  • Mint leaves for garnish (optional)
  • Ice cubes

Method

Boil the Mangoes: Wash the raw mangoes thoroughly. Place them in a pot and add enough water to cover them. Boil the mangoes until they become soft and the skin starts to crack. This usually takes about 15-20 minutes depending on the size and variety of mangoes.

  • Cool and Extract Pulp: Once boiled, let the mangoes cool down. Once cooled, peel off the skin and extract the pulp from the mangoes. Discard the seeds and any fibrous bits.

  • Blend the Ingredients: In a blender, add the mango pulp, sugar, roasted cumin powder, black salt, regular salt, and black pepper powder. Blend until you get a smooth mixture. Adjust sugar and salt according to your taste preference.
  • Sugar can be substiuted for jaggery in this recipe.
  • Make the Aam Panna Concentrate: Transfer the blended mixture to a bowl. Add 2 cups of water and mix well. This is your Aam Panna concentrate. You can store this concentrate in the refrigerator for up to a week.
  • Serve: To serve, pour the Aam Panna concentrate into glasses filled with ice cubes. Garnish with mint leaves if desired. You can also dilute the concentrate with more water according to your preference. Stir well before serving.
