Jhal Muri is a delicious healthy snack or chaat of puffed rice or muri found on the streets of Kolkata.

Jhal means spicy and muri is puffed rice. Puffed rice is known by different names in India. Muri ,maramaralu ,murmura,kurmura,etc.This snack is prepared with puffed rice boiled potatoes, cucumber,onions,tomatoes ,peanuts,coconut,coriander leaves , mustard oil and spice powder.The addition of mustard oil gives it a unique flavour and makes it different from other chat.

This chaat (Indian street food) unlike most other chaats , is not deep fried, making it more nutritious and a healthier choice. On the streets of Kolkata it is served in the traditional thonga or a paper cone.

Jhal Muri is served immediately after making otherwise the puffed rice or Muri turns soft and soggy.

How is Jhal Muri made

Ingredients

  • 3 cup puffed rice or Muri
  • 1 potato large boiled and chopped into small cubes
  • 1 small onion chopped finely
  • 2 green chillies chopped finely
  • 1 tomato chopped finely
  • 1 cucumber chopped finely
  • 2 tbsp coriander leaves chopped finely
  • 2 tbsp dry roasted peanut
  • 1 tbsp raw sprouted black chana ( whole Bengal gram)
  • 1 tbsp coconut cut into small pieces
  • 2 tbsp mustard oil
  • 2 tbsp chanachur ( farsan)
  • 1 tbsp plain bhujiya ( sev)
  • ½ tsp black salt or as needed
  • 2 tsp Jhal Muri masala ( u can substitute for cumin powder + chaat masala)
  • 1 tsp lemon juice or as needed

Method

  • Make sure that the muri or puffed is crisp ,if it is not crisp you can dry roast them in a pan for few minutes or microwave it for 30 seconds.
  • In a mixing bowl add potatoes , onion, tomatoes, cucumber, coriander leaves ,bengal gram and green chillies .
  • Add salt and jhal muri masala powder.
  • Now add peanuts and coconut.
  • Pour lemon juice and mustard oil and give it a good stir.
  • Taste it and adjust seasoning if preferred.
  • Finally add in muri or puffed rice , chanachur and bhujiya.
  • Toss well and serve immediately.

Tips

  • Make sure muri is crisp.
  • Mustard oil is a must ingredient to make this puffed rice snack.It adds a pungent flavour to the chaat , which makes it unique and yummy.
  • Boil potato until just cooked . The potato must be cooked but firm .Do not make it mushy.
  • Make sure the coriander leaves are not too moist.Otherwise puffed rice may turn soggy very quickly.
  • Serve immediately after making otherwise puffed rice turns soft.
  • Chanachur is a bengali style farsan or mix.Use any crunchiest you have in hand.
  • Jhal Muri masala is a spice powder used to make jhal muri.It can be replaced with cumin powder and chaat masala.
