How to make homemade Tandoori or Tikka Masala ? You can make your own Tandoori or Tikka Masala at home with this simple recipe.The advantage of making your own homemade tandoori masala is that we are sure of its quality and can avoid artificial colour and preservatives. The spices used are all basic and all are easily available in the kitchen.The tandoori spice mix is used especially for tandoori dishes .

Total Time: 15 minutes
Serves: 80 gm (approx)

Ingredients

  • 8 whole Kashmiri chilli ( to give red colour to the masala)
  • 6 Dried Red chilli (tikkhi Lal Mirchi)
  • 3 Bay Leaves ( Tej patta)
  • 1 Tbsp Cumin Seeds ( Jeera)
  • 3 Tbsp Coriander seeds ( Dhana)
  • 1 Tsp Black Pepper (Kala Meere )
  • 2-inch piece Cinnamon ( dalchini)
  • 6 Cloves ( laung)
  • 2 Black Cardamom (bari elaichi)
  • 8 Green Cardamom (hari elaichi)
  • 1 Star anise ( chakri phool)
  •  ½  Nutmeg (jaiphal)
  • 1 Mace (javitri)
    Above ingredients to be ground
  • 1 Tsp Turmeric Powder (Haldi)
  • 1 Tbsp Garlic Powder (Lasun powder )
  • 1 Tbsp dry Mango Powder ( Aamchur Powder )
  • 1 Tbsp Ginger Powder (Saunth)
  • 1 Tsp Salt
  • 1 Tsp Red Hot Chilly Powder (Tikkhi lal mirchi powder) (optional)

    Method
  • Heat a broad pan.
  • Combine all whole spices kashmiri chillies, dried red chillies, bay leaves, cumin seeds, coriander seeds, black peppercorns, cinnamon, cloves, green cardamom, black cardamom, star anise, nutmeg, mace in a broad pan and dry roast on a low flame for 4 to 5 minutes while stirring continuously.
  • Do not change the colour.
  • Let it cool. Grind in a mixer to a smooth fine powder.
  • Add turmeric powder, garlic powder mango powder ginger powder salt.
  • If in grinding dried red chillies used are not hot and spicy at this point add 1 tsp hot red chilli powder.
  • Blend all ingredients in a mixer.
  • Cool the spice mix.
  • Store in an airtight container
  • Can be stored for 6 months.
  • For 1kg chicken tandoori or 1 kg tikka masala add 1 and  ½  to 2 tsp of this spice mix
  • Add ginger-garlic paste, curd, lemon juice and tandoori masala to the chicken and cook.
