Green Chutney/2 Varieties of Green Chutney

Green Chutney is one of the healthy dips and is used often in Indian cuisine as a side dish. Green Chutney is used with snacks sandwiches chaat parathas chicken starters tandoori and non-veg starters.
The unique aroma of Green Chutney is amazing and it enhances the taste and flavour of any snack.
Green Chutney can be stored in a glass jar in the fridge for 6 to 7 days and in the freezer for 2 to 3 months in a glass jar. Please refer to how to store liquid in glass jars.
What is green chutney ?
Green chutney is a flavourful condiment made with fresh coriander, fresh mint leaves and green chillies.
Tips to make green chutney
- Always use fresh coriander and mint leaves to make flavourful green chutney.
- The addition of 4 to 5 almonds or 1tbsp roasted peanuts or fried split Bengal gram makes the chutney thick and binds it together and the water does not separate
- It is up to you to add ginger garlic. I add garlic as I love the flavour of garlic and skip the ginger.
- The ratio of mint and coriander can be changed. I usually use more coriander and a few mint leaves.

Green Chutney
Recipe

Serves : 2
Ingredients
1 Cup Coriander Leaves
½ Cup Mint Leaves
2 Green Chillies (adjust as needed)
4 garlic clove
1/8 inch ginger (optional)
2 tbsp curd
1 – 2 tsp lemon juice (taste and adjust)
4 Almonds or 1 tbsp of roasted peanuts or roasted bengal gram or fresh coconut
Method

- Pluck leaves of coriander and mint keep the tender stalks of coriander.

- Rinse well in water 4 to 5times and drain in a colander

- Add all ingredients to a blender jar .

- Make a thick smooth paste by adding 1 tbsp water at a time. Adjust salt lemon juice and green chillies to suit your taste.
- Store this green chutney in a clean dry glass jar.
- Refrigerate and use when needed.

5- Star Hotel Green Chutney
Ingredients
- Part 1
- 4 Tbsp Cheese Spread
- 1 Tbsp Sugar
- 1 Tsp Salt
Part 2 - 1 Cup Coriander Leaves
- 1/2 Cup Mint Leaves
- 1 Tsp Fennel Seeds
- 1 Tbsp Cumin Seeds
- 4 Green Chillies
- 1 Tsp Paprika Powder
- Salt To Taste
Method
- Part 1- Blend in blender and chill.
- Part 2 – Grind to a fine paste.
- Mix Part 1 with Part 2 ,Add 1 to 2 tbsp water if needed and serve.
- If using only Part 1 add 1 Tsp lemon juice and serve.
- Store this green chutney in a clean dry glass jar.
- Refrigerate and use when needed.
