Easy Way To Make Pot Rice

Easy way to make pot rice which is simply hot rice served with loads of colourful fresh vegetables and chicken in soya sauce. This simple delicious pot rice recipe can be served as a main course.

This chicken vegetable pot rice works great as a main course when you want something light. Plus there are loads of veggies mix with chicken and rice so it is a complete meal.

Pot Rice
1 .In this recipe In a wok add a little oil ginger garlic chicken onions and all vegetables are added one by one and stir fried.

2. Add 3 cups water let it come to boil , cover and cook for 5 minutes. On high flame add capsicum ,sauces. salt , black pepper powder sugar .On low flame add cornflour slurry,Cook on slow flame for 4 to 5 minutes till thick . Adjust seasonings add green onions.

Cook rice 90 %, add teaspoon of oil and salt while cooking. In a pan heat oil and butter add rice and soy sauce.Stir fry gently on high heat for few minutes. Add green onions and mix.

Serves: 4 – 5

Ingredients

  • 150 gm Boneless Chicken cut into cubes
  • 350gm rice
  • ¼ cup onion
  • 1/4 cup baby corn cut into pieces
  • 1/4 cup carrot cut into cubes
  • ¼  cup broccoli florets
  • ½ cup  red and yellow capsicum cut into cubes
  •  2 – 3 tbsp spring onions greens chopped finely
  • 1 tbsp garlic finely chopped
  •  ½ tbsp ginger finely chopped
  • 3 – 4 green chillies slit
  • 3 Tbsp oil
  • 2 Tbsp butter
  • 1 Tbsp soy sauce +1 Tsp soy sauce
  • 1 tsp Vinegar
  • ! tbsp Schezwan Sauce/ Chilli sauce
  • ¼ Tsp Pepper Powder
  • ½ Tsp sugar
  • 2 Tbsp Cornflour mixed in ½ cup water

Method

  • Cook rice ninety percent, add a teaspoon of oil while cooking so it does not stick to one another.
  • Strain in a strainer and keep aside.
  • Heat 2 tbsp oil in a wok add chopped  ginger garlic and sauté for a minute on  high flame till the raw smell disappears.
  • Add chicken cubes  add salt cook on high flame for 3 to 4 minutes keep stirring.
  • Now add onions and green chillies cook on high flame for few seconds , add carrots baby corn and broccoli sauté  for 2 to 3 minutes on high flame .
  • Add 3 cups water let it boil ,cover and cook for 5 minutes.
  • Keep on high flame, add capsicum ,soya sauce , vinegar ,schezwan sauce or chilli sauce ,salt and sugar black pepper powder.
  • Make cornflour slurry , mix cornflour in half cup water and on low flame add slowly to the above mix , keep stirring so no lumps are formed.
  • Boil till the mixture thickens it will take 4 to 5 minutes,taste and adjust salt and pepper .
  • Last add chopped green onions green.
  • Gravy for the pot rice is ready.
  • In another wok heat 1 tbsp oil and butter add rice and 1 tsp soya sauce.
  • Stir fry on high flame gently for 3 to 4 minutes , add spring onions green mix off the heat.
  • In a serving plate place rice on sides of a bowl and in centre pour the gravy.
  • Hot pot rice is ready.
  • Serve hot.
