Dum paneer in earthen pot, dum means to seal and cook the food on slow fire. In this recipe after sauting and mixing, food is transferred into an earthen pot and sealed, then allowed to cook slowly in its own aroma and juices to make it more flavourful.

How is this recipe made?

Saute
Heat oil in a pan add onions ginger garlic and green chillies sauté till onions are brown.
Cool the above mixture and grind to a fine paste.
In another deep  pan , heat oil add bay leaves cardamom cinnamon and cloves. Saute for few minutes , then add ground paste half cup water and let it boil for 2  minutes on a slow flame.
Add all masala powder , salt , paneer cubes and curd.and cook on slow flame for 5 minutes. Add cream and saffron and mix.
Tranfer the paneer in an earthen pot
Transfer the content in an earthern pot sprinkle garam masala powder coriander leaves mint leaves rose petals and rose water.
Seal the pot
Seal the pot with  foil , cook on slow flame for 20 minutes.

Recipe

Ingredients

  • 200 gm Paneer cut into cubes
  • 4 medium-size onions chopped
  • 6 cloves of garlic
  • 1-inch piece ginger
  • 2 Bay Leaves
  • 3 – 4 green chilli
  • 2 Cardamom
  • 2 Cloves
  • 1-inch Cinnamon
  • ½  Tsp Cumin Powder
  • 1 Tbsp Coriander Powder
  • 1 Tsp Crushed Pepper
  • ½ Cup Curd
  • ¼ Cup Cream
  • A pinch of Saffron
  • 2 Tbsp Coriander Leaves Chopped
  • 1 Tbsp Mint Leaves
  • Few Rose Petals
  • 1 Tsp Rose Water
  • ½ Tsp Garam Masala Powder (to make homemade garam masla)
  • 2 Tbsp Oil
  • Salt to taste

Method

  • Heat 1 tbsp oil in a pan add chopped onions , ginger , garlic and green chillies.
  • Saute till onion turns brown.Let it cool and grind to a fine paste.
  • Heat 1 tbsp oil in another pan add bay leaves  cardamom cinnamom and cloves ,sauté for few seconds.
  • Now add the  brown paste add ¼ cup water mix and cook for 2 – 3 minutes.
  • One by one add cumin powder , coriander powder ,pepper powder and salt.
  • Cook for a minute add curd and paneer cubes
  • Let it cook for 5 miutes on a slow flame .
  • Stir in the cream and saffron and mix .
  • Transfer into a earthen pot sprinkle garam masala powder coriander leaves , mint leaves , rose petals ,rose water.Seal with aluminium foil and cook for 20 minutes on slow flame.
  • Serve with hot kulchas or steam rice.
