Chicken Drumsticks / Drums of Heaven are basically chicken drumsticks tossed in a sweet-spicy sauce. The key to this recipe is the sauce. Drums of heaven is a popular appetizer in restaurants but you can easily make these at home. They are crispy outside and juicy inside. These homemade chicken drumsticks are free of artificial colours and MSG.

Though drums of heaven are usually made with chicken lollipops I prefer to use drumsticks. It is perfectly your choice what you want to use.

How to make Chicken Drumsticks / Drums of Heaven at home

Chicken Drumsticks
  • Wash and clean the drumsticks.
First marination
  • For the first marination, mix together soy sauce, vinegar, red chilli powder, ginger-garlic paste,black pepper powder and salt.
Marinate the drumsticks
  • Add the drumsticks and marinate well. Keep aside for about an hour.
Second marination
  • To this, add the second marinade 3 flours , egg , red chilli powder and salt. Mix well without any lumps. Now deep fry the drumsticks.

  • In a pan add oil once the oil is hot, add the drumsticks. Do not move the drumsticks for 2 minutes and then keep stirring till golden.

Sauce for Drums Of Heaven

  • For the sauce ,in a pan heat oil add finely chopped ginger garlic stir for a few seconds then add chopped onions stir till onions are soft.
  • Now add the sauces sugar and vinegar and let them cook for a few minutes.

  • Then put in the cornflour slurry mix well cook till the sauce is thick.
  • Add in the fried drumsticks, stir fry for a minute till the sauce coats it well.
  • Garnish with chopped spring onions.

Tips

  • Adding rice flour to the second marinate makes the drumsticks crispy.
  • Serve immediately after adding the drumsticks to the sauce or else the drumsticks will soak the sauce and it will turn mushy.
Chicken Drumsticks
  • If you are not a fry lover and do not like frying and want to avoid frying after the first marination take a pan add a tsp of oil put in the chicken with the marinade cover and cook till soft .
  • Omit the second marination and the frying part , make the sauce and add the drumsticks.
  • These chicken drumsticks taste delicious, the only thing it won’t be crispy as the fried ones.

Recipe

Ingredients

  • 10 – 12 Chicken Drumsticks
    1st Marinade
  • 1 tsp Soya Sauce
  • ¼ tsp black pepper powder
  • 1 tsp  Kashmiri Red Chilli Powder
  • 2 tsp ginger garlic paste
  • 1 ½ tsp Vinegar
    2nd Marinade
  • 1 ½ tbsp Rice flour
  • ¼ Cup Cornflour
  • 1 ½ tbsp All purpose flour or maida
  • 1 Egg
  • 1 ½ tsp Kashmiri Red Chilli Powder
  • 1/8 tsp salt
  • Oil for frying
    For the Sauce
  • 1 tbsp Ginger, finely chopped
  • 1tbsp Garlic, finely chopped
  • 3 tbsp Onion, finely chopped
  • 2 tbsp spring Onion Greens,chopped for garnishing

  • 2 tbsp Tomato Sauce
  • 1 tsp Soya Sauce
  • 2 tbsp Oil
  • 1 tsp  White Vinegar
  • ¾ tsp Cornflour mixed in 4 tbsp water
  • 1 tsp Sugar

Method

  • Wash and clean the drums. Put slits on the drumsticks.
  • For the first marination whisk together soya sauce, vinegar, kashmiri chilli powder, ginger garlic paste, black pepper powder and salt.
  • Toss in the drumsticks marinate well.Keep aside for an hour.
  • In the same bowl , add cornflour , rice flour , all purpose flour , egg , red chilli powder , salt. Mix well to create a thick batter and coat the drumsticks.
  • Heat oil in a kadhai or wok. Keep medium flame add the battered drumsticks , do not move the drumsticks for 2 minutes than keep stirring till fried .
  • Take this out on a tissue paper to blot out any excess oil and set aside.

For the Sauce

  • In a wok or kadhai , heat oil add ginger and garlic. Stir fry on high heat for a minute, add chopped onions.
  • Keep stir-frying till the onions soften.
  • After few seconds add schezwan sauce , vinegar ,soy sauce tomato ketchup and sugar.Cook the sauce for 2 minutes ,stir fry as it cooks.
  • Add the cornflour slurry and keep stir frying as it thickens ( approx a minute).Add the chicken  drumsticks and toss well.
  • Top with spring onions greens and serve.
